Simply head over to the Google Talk Labs Edition website, download and install it. Google Talk Labs Edition offers an option of staying Invisible when setting an Available or Busy status (and message). Simply select the option to remain Invisible.
It also offers GMail, Google Calendar and Orkut notifications - which are new features in the latest version.
